River? Lake? Reservoir? Caught a fat one in a reservoir when I went Kokanee fishing. Silly thing stank like carp. All muddy like [xx(]. Gave it away.

Sprinkle lightly with gravlax cure (equal parts sugar, salt and fresh dill weed). Table spoon a side depending on the weight and lay a layer of dill weed and reefer it. How long? Long enough so the salt/sugar mix draws out the moisture. Then low hot smoke it. Yes you're cooking it.

I don't wash off the cure but I do brush off the dill. So what ever sugar/salt mix that didn't get absorbed will go with the bulk of the dill. I leave a bit of dill since I ain't washing it clean. Toast some bagels and get the smear ready for good eats if the trout's not from a lake or reservoir.

Or just throw it in to an oven wrapped in foil with butter. I hear some folks even use them like fish sticks. Beer batter and deep fried.

Wrap it in aluminum foil with a stick of butter. Cook on the grill until almost burnt.
Then feed it to the dog.
I catch a lot of stocked trout each year, almost always release them.
I?d much rather have catfish or bass. Or even Gordon?s fish sticks.

After it thaws poach it lightly and eat it in some marinara sauce and noodles.

Trout is one of the fishiest tasting fishes there is. And the following way to prepare is the only way that I can eat it, and if it's prepared this way I really like it.

So with that in mind, the best way to make it taste less fishy is drizzle Lawry's Lemon Pepper marinade inside the fish (it has to be Lawry's) put a slice or two of lemon and take a couple of slices of bacon and put them inside the fish. Then take and wrap the outside with bacon and drizzle some more Lawry's Lemon Pepper marinade on the outside, but a slice or two of lemon underneath and on top the fish, wrap it with tin foil then Grill it on your barbecuer with indirect heat until the meat is flaky. Or bake it prepared the same way until the meat is flaky...

The slices of lemon and bacon will pull a lot of the fishy taste out of it. And of course we all know that Lawry's Lemon Pepper marinade is perfect for fish

If you can't get Lawry's Lemon Pepper marinade at your local store, you can order it online. It's also great with salmon, halibut, cod, red snapper, and tilapia. I have never tried it on any other fish, but I'm sure it's good on all fish

Or just smoke it like the yoshy says. But then again around here the Orientals poke out the fishs eyes and eat them on the spot... That's grossest thing, watching them eat fish eyes while they're fishing[xx(]

One more thing, do not microwave to thaw it. Microwaving it to thaw will make it taste even fishier

DO NOT THAW IT IN THE MICROWAVE!
Just set it in the frig for a day to thaw. The microwave will partly cook it.
Sprinkle with Johnny salt and a light coat of brown sugar and broil until flaky.

If I can't pull those radial bones, I just marinate mine in lemon juice and dill. It softens those bones so I don't even notice them. With bigger fillets I use hemostats or small pliers. But yeah, trout just aren't very good to eat. I haven't kept any in years. I don't understand why I keep fishing them.

I find the smaller sized trout that I catch in cold creeks and streams to be absolutely delicious!

Mostly Brown Trout or Brook Trout that are of legal length from 8 to 10 inches long are best.
I enjoy an "English" breakfast with them, dusted with flour, salt & pepper and pan fried in butter cut with a little olive oil.[:p]

Crispy tails, fins, and skin are all savory morsels that defy logic when all most folks know about trout are dealing with the big lunker's!

With the right seasonings and deep frying or pan frying it, trout ain't that bad. Not as good as Walleye, crappie, bluegill, perch, catfish or bass by a long shot but it is edible. No way would I want trout baked in the oven.

Love "brookies" as we call them cooked this way and yes we will them for breakfast.
