Had a 11 pound something Keta salmon covered in salt for two days. Filleted it then portioned it. I used to fillet it before salting but salting them first is the way. Makes the flesh firmer and make the task so much easier.

So I'll be having salmon shio yaki (salted salmon grilled). Threw most of it in the freezer to slow down the further salt penatration.

I'm gonna stop by Sonic on the way home for a Bacon egg and cheese burrito with onions.500 cal., lots of protein, tastes great, and is $2.77 including tax. Oh and they bring it to my car in like three minutes. Then an ex large cup of black DD coffee and I'm good.

I think you and I would have fun cooking together some day Ken. It's clear that you have great passion for preparing good foods. I do too and really enjoy making others happy with my cooking skills. [^]

I would Love to meet you Brother.

I enjoy cooking. I eat better than any single guy I know. My Son once told me, "Dad, I wish Mom could cook like you." [:0][B)][:D]

I taught her how to cook beyond the rudimentary. [^]

Brother, I have never forgotten the offer you made to take my dog in, if I were to pass. He is a total sweetheart. Best dog I have ever had. Tons of personality. We need to communicate further. [:D]

There could be some nice firearms in the mix as well.

Just filled a 5 gallon crock with corn for pickling. It'll be a week and a half or so before it's ready to eat.

Last night, I dream't of eating succulent, butter laden Maine lobster tails along with gigantic scallops, zesty herbal shrimp scampi, stuffed crab, perfectly cooked and seasoned sea bass, and a big pile of fried clam strips complete with all of the magic dipping sauces![:p]

It must have been a dream brought on by the indigestion from what I really had for supper, leftover pizza, hard as a brick and some sort of cold PBR's that were still in the cooler from the day before![V]

Now you are talking. I really miss going up to the Coast of Maine. (Down East.) I went up there for about 11-15 yrs in a row. Camping/Sea Kayaking up and down the Coast. Started at Ogunquit, then on to Booth Bay Harbor, then to Stonington Isl., then on up to Acadia/Bar Harbor. We might rough it during the day, but each evening was a Seafood feast, at anywhere from very nice restaurants to eating on a park bench next to the fishing boats, fighting off Seagulls. [:D]

Good times and good eats. Man do I miss that.

Two very nice NY Strips. Cast Iron skillet, light coat of EVOO on bottom of skillet. Salt/Pepper. High heat, seared both sides to seal. Into the oven with thick Steak fry cuts (3 large russets.) On a large aluminum tray. EVOO/salt/pepper. 400* for ? (Will monitor.)

Adding a large wedged onion in to the steak/cast iron skillet when 2/3rd's done. A splash of Worcestershire. Sadly out of fresh Portabella's and Crimini's. [V]

Fresh from the garden green beans, steamed, then butter added. Salt/pepper.

    You?
