Taco Leftovers -

Had about 1 1/2 lbs. of lean browned ground beef with onions in it. Salt/pepper, smoked Chipotle dust, a tablespoon of ("Hot, hot, be very careful,") Chile Pequin' (Thanks to gunnut505's generosity.)

Decided to make Potatoes Stroganoff with it. Several fine diced russet potatoes, lots of sour cream, half and half, worchestershire sauce, diced a large high acidic garden tomato in to it, added a large double handful of (small diameter) garden fresh green beans in to it. Some EVOO.

Been bubbling away for about an hour or so. Will be good stuff.

Still maintained a small (1/2 lb) container of the ground beef.

Think I will make some Ultimate Nachos with the left over Taco beef. Large Pyrex baking dish, one large bag of Tostitos corn chips. Some slow cooked Pinto beans mixed in with the ground beef. Shredded cheddar on top. Baked to warm, and melt cheese. Add sour cream, fresh guacamole, diced pickled Jalapenos, shredded lettuce, diced tomatoes, a few shots of Orange label Tabasco.

Will be good in a couple days. [:D]
