Proper cleaning of Nickel and Stainless

I don't know about nitro solvent hurting nickel/chrome plated stuff, but there is a difference between something made out of stainless, and something plated. If your plating starts to delaminate; copper solvent probably wouldn't be my first choice for cleaning.
When something is plated, usually a base metal is applied to help the plating bond to the item being plated. Sometimes a copper wash is used as the base metal, which would be a bad thing if it started to peel away from the gun.
I don't think that Hoppes is going to hurt your stainless stuff unless you're using a wire wheel to put it on with. Even then, you might get a more subdued finish, but you won't change the steel itself.

You bet! For odorless cleaning of anything on that kitchen table, try M-Pro7; it dissolves carbon and bonds to the metal to keep it easier to clean.
If you kinda like the smell, try Shooter's Choice, Outer's, almost any that don't say, "Copper Solvent" or "Washes away copper quickly" will do the job.
Does the plating have nicks, scratches, or other defects that have you worried, or are you just trying not to peel off the plating?

Great! What you can do to help preserve the finish is find some paste wax (like the furniture stuff), and apply a thin coat to all the exterior surfaces. Give it about an hour in a warm room, then wipe off the haze with an old cotton sock; turning & shaking it out frequently. You can repeat the treatment after every cleaning to keep it purtyful.
