Which one is better for shooting 500 to 1000yrds and why?

The 300 Win Mag has the edge on the 7mm Mag at the longer distances due to the fact it can launch a heavier bullet. The heavier bullet will retain better downrange velocity and is less affected by all of the common variables that can affect the bullet's flight path.

Bert said it best, but if you want a real long range accurate shooter, that will out perform both of the afore mentioned calibers, go with the 300 Weatherby. By far the flattest shooter out there, at those ranges, that still has a good amount of retained energy at 500 yards, and won't cost you an arm and a leg for ammo, or a rifle either. Something to think about!

Gather all the information you can regarding your question and, while doing so, be sure and take a look at the 7mm Ultra-Mag. The ammo is much cheaper than Weatherby and depending on exactly what you want to accomplish with the gun this may very well be the chambering for you. The ballistics of this round are truly impressive. Check it out!

Most of these guys shoot 1000 yard matches and specialize in the long range stuff. I have learned a lot and gathered a lot of data from their site. I am on the same quest you are, reaching out to 1000 yards with some accuracy, but trying with a 308.0 -
A few things to consider:
1: projectile weight as related to bore dia, yielding a balistic coefficient for each of the 7mm and the 308 bores.
2: Bullet purpose? paper or meat or a compromise?
Here'y my point. Take a 7mm pill weighing 162gr's at 3150fps with a BC of ~.625 and a 308 pill weighing 178gr's (both identical designs for comparison) with a BC of .475 launched at 3150fps (again equal velocities for comparison) The 7mm pill will retain more energy past 500yds as it presents a smalled frontal diameter to cause drag (higher BC). Don't overlook the 7mm match grade pills from the 160gr up to 180gr[8D].
Now,..BC and therefore retained energy can be a real issue if you wish to hunt with the bullet. Then you need a pill capable of delivering enough shock to cleanly harvest the animal. Now,..BC's and muzzel velocity can play a bigger role if premium bullets choices only offer a few alternatives,..luckily not a problem with either bore dia. The nosler accubond bullets are getting some great results as far as long range accuracy coupled with hunting performance. I have only used 2 on game,..but both were moderately long range and both flew true and harvested QUICKLY.
Purpose can help to make a better decision. I think you have 2 calibers picked out that will run neck and neck out to 1000yds easily under most any circumstance.
why chase the game when the bullet can get em from here?....
