Colt Blackpowder 1860 Army .44 Series

Could someone please explain the significance of the Colt Signature Series/Officer/Standard Models and fluted/unfluted versions and there values? Are these made to shoot or only collect? I would love to have one, but would want to shoot it and wonder if that is taboo? Any advice is appreciated.
