After the AW ban sunsets, can I legally....
Next week when (if) the assault rifle ban sunsets as expected will it be legal to add a folding stock and flash hider to my mini-30 that has a 30 round magazine? How will this affect SKS rifles or will it change anything on these?

Yes.

Generally, you will not be able to modify SKS's into "assault rifle" configurations because they are imported firearms and are regulated by laws different than the 1994 law. It would not surprise me, that if the ban is not re-instated, there could be American-made replacement parts sets that would give SKS's enough American-made parts to allow things like a folding pistol-grip stock for the rifle.

Twalker,
Remeber that no State laws are sunseting, so if you have any state laws where you live that prescribe AW configs the federal ban sunseting will affect you differently then states where the state laws consist of "obey federal laws"0
