I've been spending quite a bit of time shooting the 25 WSSM and I think that it would be perfect there in Missouri.
24" barrel/ 115 gr. Berger VLD/ Re-19, V V N-160, IMR-4831, Ramshot Hunter/ all yield about 3200 fps.
You can also use the 100 gr. TSX-BT, 115 gr. TSX or the 115 gr. Nosler Partition.
If you think that the 25 WSSM is too light then my next choice would be the 7mm RSAUM which is more efficient and just as fast as the WSM. There is a good selection of top quality hunting bullets available now.
If you prefer a 30 caliber, then the 300 RSAUM would be perfect but use a 180 gr bullet.

I think you need to go with the 7mm or 30 caliber if you going out to 500 yards. Your going to have alot less wind drift with the heavier bullets. The WSM's are going to be around longer than the RSAM's. Federal and Winchester both load WSM so you have a little more ammo selection over the remington's 0 -

I was hoping someone would say the 7mm WSM [:o)][:o)]
I just won one a few weeks ago on gun ticket , mod.70 Black Shadow [:)][:)]
Just picked up a set of RCBS dies , but didn't get to load anything for it yet .
Topped the rifle off with a Nikon Pro-Staff 3x90
