It appears to be a SPANISH 1916 MAUSER SHORT RIFLE.
"Using the model 1893 Mauser rifles, Spain developed the Spanish Civil Guard, M1916 Short Rifle, a rifle that changed a 29 inch long barrel to 21 inches. According to sources, these rifles were made by the Ovideo arsenal between 1916 and 1951. Original 1916 short rifles were in 7mm Mauser (7x57). The Guardia Civil rifles, marked with the crest of crossed sword and fasces, apparently were converted to 7.62 from both 1916 and 1893 rifles in the 1960's. The converted rifles typically have the caliber 7.62 marked on them. The two rifles are very similar except for caliber and barrel length (the 7mm barrel is a hair longer). These rifles are considered to be small ring Mauser receivers and are two-lug designed bolts, lacking the third safety lug commonly found on other Mauser rifles.
This short rifle features a turned-down bolt, recessed 5 round magazine, Guardia Civil Crest on the receiver (as shown below), fixed side support and sling swivel. Barrel length is 21 inches and overall length is 41.3 inches. The sights are inverted-V front and adjustable V-notch rear."

Is there any way to determine - without taking it to a smith -
if is 7x57 or the 7.62 NATO? I doubt I'd shoot it in the 7.62
but I have a nice little 7x57 Chilean Mauser that would love the
company out on the range!

Well, if you have a 7mm bullet, if it drops down the whole length of the bore....
Incidentally, I wouldn't fire full power .308 Win ammo out of it, as it is really chambered for the lower power 7.62 Cetme, but if you handload, they are fun little guns in either caliber.

The most accurate way is to cast the chamber with CerroSafe from Brownells and measure then compare to an accurate drawing. But other clues can be gotten by carefully miking the groove diameter at the muzzle or using dead soft lead and slugging the barrel. If you could borrow the correct headspace gauges, you could tell which family of cartridges your rifle would use but it won't tell you exactly which cartridge it is. Your best bet is to cast the chamber.
You could try to chamber an empty piece of brass of each for another clue.

if it chambers a 7x57, and a 7mm bullet does NOT fall into the bore from the crown end, then I would say it is a 7x57. A 308 chamber will NOT allow a longer mauser 7x57 case to chamber as the shoulder is farther foreward.
why chase the game when the bullet can get em from here?....
