Where can I find a conversion table for European to American shotgun chokes?

not true. euro chokes are done in metric. usa is american standard.
rule of thumb is one choke difference.
i/e:
skeet/usa = skeet in usa. bring it to europe and its a cylinder to them.
european/skeet = skeet in europe. bring it to usa and its an ic to us.
its tighter over there than here.
their full there is really an extra full if brought over here.

Maybe you are referring to a particular European made shotgun. If so, please say an example.
But as a rule:
Chokes are not expressed in dimensions (diameters), so euro chokes are not done in metric. If you know an example where chokes are done in metric, please let me know.
Small Arms & Ammunition Manufacturer's Institute (SAAMI) issued a recommended standards for chokes in each gauge. For example in 12 ga, if the standard diameter of a bore is .729 inch:
Full choke is .694
Modified choke is .710
Imp. Cyl. Choke is .720
Cylinder choke .729 (NONE)
These designations and dimensions are the same in Europe.
There is a difference in boring in Europe, though, so that standard 12 ga shotgun barrels run from .722 - .729, hence the smaller choke constrictions in smaller bores, but the percentage of constrictions are proportional.
Therefore, it is not true that the skeet choke in the USA is a cylinder choke in Europe.
Cylinder choke is cylinder choke (no choke at all) in the USA, Europe or anywhere else.
The same applies to full choke and all others in between.
Furthermore, it is not true that the skeet in Europe is IC in the USA.
I don't know where your information came from, sorry, but you are wrong.

Skeet choke is a special type of choke which do not falls in standard choke categories which are from cylinder to full. There are all kind of variations in Skeet chokes, but no standards as far as I know.
