I'm trying to find the date of manufacture of my Eddystone with serial number 125XXX

  The Eddystone, Enfield chambered for the 30-06 cartridge was only made for ( 3 ) years. It appears from your serial number that your rifle dates to the first year of production, ( 1917 ).
