What does "open bolt" mean?

What is this difference between open and closed bolts? I realize open bolts are "easily converted to FA" but what the he*l does that mean? How can the bolt dictate how easy a firearm can be converted when there are so many other parts involved? Why are people charging and paying such high prices for the open bolts. Thanks in advance for any help, the lack of knowledge I possess frustrates me every time I look at these high priced listings.

  the bolt flies forward with a fixed firing pin to fire the round when the trigger is pulled. closed bolt is bolt closes then a hammer strikes a firing pin that pops thru and fires off the round when the trigger is pulled. i/e: MAC-10 is open bolt. remington 1100 is closed bolt.

  Open bolts are important in automatic weapons for keeping ammo in a magazine or belt and out of a hot chamber to prevent cookoff.
  Some automatic weapons operating on the open bolt system have fixed firing pins while others have moveable firing pins and hammers. The Thompson is an unnecessary exception, having a moveable firing pin which cams forward as the bolt closes.
  Open bolt systems can be much simpler in design.
