    Improvise:

I have a side mount scope on my M1 carbine.
I just put a couple of strips of double stick tape on the scope and mount.

    Works fine no more dings

Or do as I did get one of those Scout Mount (UltiMAK) with A.R.M.S. Lever scope rings for my SS Ranch. I tried the rings that came with the Mini and the scope retical moved like a clock. Good thing it was an inexpensive scope (NCStar) and they replaced/fixed it for ten bucks. But if you're still after the deflector good luck.

The regular Mini-14 (non-ranch) ejects straight up. The ranch model ejects to the side. Have you actually tried the ranch out yet? You shouldn't have a problem with the scope being hit by ejected shells on a ranch model.

I'm curious why one would bother with a scope on a mini-14. I'm lucky to hit a 9" pie plate at 100 yards [from a rest] and it is so inconsistant a scope wouldn't make much difference. Worst gun I've ever bought......
There is an outfit in Oregon, E & L Manufacturing, Inc.,that makes a plastic box "brass catcher" for $35-40. It catches the brass OK but it also deforms the case neck so bad that many cases can't be reloaded. http://www.brasscatchers.com/index.html
