What is the difference?How is one better than the other?

Both are very nice and reliable OU shotguns. The 687 is a higher grade than the 682, but as I said--both nice shotguns. Both come in several grades, 687 EELL, 682 Gold Skeet. etc., etc.,etc.
I see lots of them on the skeet fields.

Generally, the 682 is a target gun w/ manual safety.
687's are higher-end field pieces. EL & EELL indicate progressively higher grades of walnut, engraving, inlaying, etc.0 -
Quality of workmanship is the same for the 682 & 687 series guns. As mentioned before the 687 series offers more elaborate options, (engraving, stock, barrel length, rib width & height). Below are a couple of pictures of my 687EELL Sporting model. I purchased this gun new in 1990 and have put many 10s of thousands of rounds thru it. I had it tuned by Beretta in San Antonio once in 2000. It has never given any problem and still sees weekly use.

I seem to recall that 682 has extractors which lift empty about 1/2"
687 has ejectors which will kick empty hulls over your shoulder.
Both models available in same grades I think.

Have not noted plain extractors on a modern Beretta O/U 682/687 (at least since 1988 or so), but see no reason why it couldn't be. Different strokes, etc.
For example, my '88 era 682X Trap model has some of the most robust auto ejectors I've ever seen0
