How do I remove the bolt of a 30 40 krag:

Pull the bolt to the rear and gently lift the extractor on the top of the bolt and slide it out.

What is more fun is taking the bolt apart, then TRYING to get it back together.

Pull the bolt to the rear. Lift on the extractor. It may take some force. Continue to turn the bolt body while lifting on the extractor and it should pivot so it can be removed.
