What do I need
I am a mother of 3 children. 15, 11, and 8. I need to know what I need to ensure the safety of my children when all hell breaks loose. We have a .45 Glock right now, but I would like to ensure that they can defend them selves in the event that the unthinkable happens. I am compiling a survival kit with basics like food, water, medical, firearms and ammunition. Any suggestions? I would also like to begin hunting with them, so we know how to live off the land if necessary. I am very clueless with all of this.

Hornet spray in the eyes of an intruder would be great, it shoots to 20 ft. Then a .22 or 410 pump shot gun to teach them how to shoot , hunt, and most Importantly the importance of safety and cleaning of the gun. Keep em clean and they won't fail u in the time of NEED! 0 -

For all that you described, looking into survival classes, with firearms training included, may be first a step? It is too vast a subject to be given much address here, as the basic idea of this forum is matters usually emphasizing the mechanics of, parts, values, history's, etc.
In other words, it is not, per se, a personal defense forum. Maybe over on the General Discussion forum of Gunbroker will offer more assistance?
Yet, since you are here and using your "clueless" discription as a guide... you have children in the house, and you should learn, know, and put into practice the safety and responsibiltiy of that right, along with your local laws about safe storage of a firearm.
Safety is always first and foremost-- when I taught NRA Basic Pistol, I'd give this, or similar, verbal pop quiz to help drill into the students heads:
1) Every gun is loaded, treat it as such, never assuming it is not.
2) Always keep the barrel pointed to a safe position in case of accidental discharge. It happens.
3) Never put your trigger finger inside the trigger guard, meaning keeping it off the trigger entirely, until after you have sighted in on the target.
This is common sense stuff to avoid an unwanted discharge of a firearm, and there is lots more, especially when come to learning the usage of any particular firearm.

To answer your question, it depends. First you need to answer the questions: What am I preparing for? How long do I expect this to last? From those questions, you need to look at your available resources. For example, you mention learning to hunt. That's a great idea, unless you live in a heavily populated area like New York City. There are a lot of good sites dedicated to helping you find the answers (yes, plural) to your question. Some have been mentioned, others are:

As with anything on the internet, take what you find with a grain of salt.
To answer part of your question, if it were me, I'd start with the following: An accurate .22 rifle and at least 1000 rounds for small game, snares (they work 24 hours a day), food and water for a month or more (start with canned goods that you already use, just buy more)
Notice that I said "start with". As you gather more information, you'll learn more about what YOU want and need.0
