25-06 based on a 30-06 casing so I know it has some recoil but shouldnt be too bad. I am not familar with the 257 so I can't answer that one. My advice is if you are recoil sensitive is install a
Pachmayr Decelerator Recoil Pad , takes a lot of the kick out of it.

Both great cartridges and neither kicks much in my Encores or in a Weatherby Mark V ultra-lightweight; especially with 100 grain bullets. I don't perceive much difference between the two although the Weatherby burns more powder and has higher muzzle velocity so probably has more recoil. The advice to add a Decelerator or comparable butt pad is good. You can also add a muzzle brake that will really tame them. 0 -
Maybe .223 or .22 Mag. would be best? What are U planning to do? Punch paper,kill deer,groundhogs,Elk,Moose? NEED MORE INPUT!! 0 -

They both might be a little light for moose unless you can get a great shot in on one. You should be good with either one for deer. 0 -
I wouldn't hesitate to use either on moose with a premium bullet like a Nosler Partitian, inside of 300 yards and with good shot placement.
That said, the Weatherby round, if the stock fits you, will give you less perceived recoil than the 25-06 in a rifle that doesn't. If possible, shoot both and see what you think. I had a .338 Mags (in an old Sako) that was more fun for me to shoot than a 30-06 (Rem.700)
A good recoil pad can make a world of difference, but it's no substitute for a properly fitted stock. IMHO.
