Farm eggs are harder to peel than store bought. Don't know why, they just are. 0 -
the fresher the egg the harder it is to peel the shell off. Try poached instead of hard boiled if you don't like fried . 0 -
If you can take the heat, peel them hot, usually works. 0 -
Farm fresh boiled eggs will be harder to peel than store bought, which have been aged longer. Need some time in the frig before boiling, the freshness is the primary difference. 0 -
Not that I am a big egg eater, but a little olive oil in the boiling water will help soften the shell too. They also say that the diet of the chicken has a lot to do with how dense the shell of the egg is.

Why not peel the boiled eggs like professional cooks do. Put the boiled eggs into a collander in the sink and run the cold water tap over the eggs. When they are cool, put the eggs into a bowl next to the sink. put the collander back into the sink and run the cold water into it. Band the big end of the egg onto the side of the sink to crack it and then put it under the water and start peeling. The water will help in peeling the egg. Drop the shells into the collander and put the peeled eggs onto a plate. 0
