What kind of performance difference can I expect between 165 and 180 grain bullets?

The 165 will have a little more speed, and the 180 will have more momentum. However, at the difference in speed, and weight, it would be minimal. So, unless you are going to go to the 135, or 155, you will not see much of a difference.

The 180 should have more penetration. I think the 165gr would be a nice blend of velocity and penetration. Also the 180 would have a little more recoil. 0 -
There are really two different comparisons.
Some 165 gr .40s, like Hydra Shok, are loaded to about the same velocity as the 180s. Advantage of slightly lower recoil.
Some 165 gr .40s, like Golden Sabre, are loaded to substantially higher velocity than a 180. Advantage of higher energy and even higher momentum. More power by any standard. More recoil, too.0 -
The 165 Hydra-shok load was deliberately reduced to the velocity of the 180 because they were getting too much through and through penetration. We used them on duty and did not find any deficiency in striking power or ability to stop an agressor. There is a slight reduction in recoil. 0
