Kind of difficult to explain, as Colt has made changes to their auto pistol line over the years.

Currently, the 1991 series uses the 80 series firing system & the guns have a long trigger. Also, there is a choice of styles & finishes & calibers. There is also a 70 series, with the short trigger & only a few options. Check the Colt website for details.

When first introduced, the 1991 had a plastic MSH & trigger; now they have a steel trigger.

Colt doesn't currently catalog the 1911 series, which have the flat MSH, long trigger, & unscalloped frame; these are reproductions of the original military 1911's, & several variations were offered.

I have both. Like them both but the 1991 seems a bit "cheaper" than my 1911A1 bb. I prefer the older Series 70 Colt.
