Haven't shot 308 in years. 160 to 180 grains bullets will meet your needs. Favorite load 172gr FMJ BT (pulled match bullets) and a full WW case of 4831, lit by a CCI 200. Gong an armored personal carrier at 3000 yards offhand with iron sights with alarming regularity.

Sierra 168 HPBT match, 42 gr. IMR4895 works great as a target load in my .308's. A good deer load is Nosler 165 gr. balistic tip over 43.5 gr. of Ramshot TAC. 180 gr. loads in my .308's max out at 2500-2600 fps wich would be fine for elk, but I guess I'd stick with the 165's and go with a premium bullet like the Nosler partition. I think you'll like your long-barreled 700. Good luck.

I like the 150 gr. Hornady SST with Varget, it works great on whitetails. I get the most consistent groups using the low-end of the data(Howa rifle).

I'm at the other end of the spectrum on 308, 700ADL with 20" barrel. Primary use is big game hunting, for which my preferred bullet is the 165gr Speer MagTip. WW748 works well in it. For target I'd give the Berger/Sierra 175 grs a try.

You need to try several loads to see what one YOUR RIFLE tells you, it likes best. If I were loading them myself, and wanted to keep a minimum inventory on hand, I would try a 165/168 grain, or 180 grain Barnes Tipped Triple shock bullet. If your rifle shoots them accurately, they will deliver the goods on ANYTHING from mice to moose, and would work in a pinch(not exactly what I would prefer) for things that can eat you, like the big bears.

My 700 308 shoots incredibly tight groups with the 150 grain remington accu tip and varget powder. It's a win win because it's also a great hunting bullet and will drop a deer in it's tracks.
