Ejection pattern is influenced, by both the extractor and ejector. First thing I would do, is to take the slide off. Check the extractor and ejector for both breakage, and build up of dirt/lubricant. If everything looks OK. Reassemble the slide and give it another try.

Still having problems try a different brand of ammo.

Fix might entail work on the extractor, (tuning the extractor). Or replacing ejector, with one that is either longer or shorter.

Sometimes the front portion of the ejector, that contacts the base of the fired cartridge. Can be filed at a angle, to alter ejection point. And/or angle that the fired brass is ejected.

Kind of a trial and error thing. Better make sure, you start with some spare ejectors. Before you start altering them.

Never played with a defender, but shot out several barrels in a 1911.

In the 1911 you can steer the spent cases by the radius on the extractor and perhaps a small angle on the corner of the ejector.

+1 for spare parts before taking a stone, needle file or a Dremel tool to fix the issue. Pro help could be a lot cheaper and faster than DIY using books or vid's.

Try other ammo after cleaning the pistol properly. I'd be using brass cases in ammo I loaded.

I'll bet the extractor is clocking. If you look at the extractor at the rear of the slide is it flush with the edge of the hammer or at an angle? Can you rotate the extractor at all?

If yes then you might need a new firing pin stop and or extractor fitted.
