Simple Fare -
Two cups dried Pinto beans. Salt/pepper, Galena Blasting Powder spice, some hot Chili Powder from Hatch, NM., (both thanks to gunnut505's generosity.) couple shots of EVOO, about a teaspoon of Stubbs liquid smoke.
On high boil for about 5-10 minutes. Down to medium, covered for another 4-5 hours.
Tonight will be some Saffron rice, fresh diced onion, fresh diced tomatoes. Some Chow-chow. Good simple eats.

Sounds very good GG. I wish I had some smoked ham hocks to have added in. (Or smoked pork of some variety.) This is one of my favorite (yet simple meals.)

I had a bacon egg cheese and onion burrito at lunch so I?m goo to go till tonight. $2.77 including tax,brought to my car usually in less than five minutes and sooo good. 0 -
Tonight it will be BLT's with my first ripe plump 3\4 pound tomato's from the garden.
Will be using dark rye seeded bread that I bought at a local deli for Rubin's. Just haven't thawed out the corned beef yet. I have been jones'n for a garden tomato for so long!!

The Mrs. fixed a big pot of homemade chicken soup that will do quite nicely for the 2nd coarse![:p]0 -

I hear you Brother. Had no smoked Ham Hocks. I Improvised, I had two left over smoked beer brats, fine diced them and added them to the bean pot. Best I could do without going to the store. (Added a few shots of Orange label Tabasco sauce as well.)

That sounds Awesome! I love BLT's. I very rarely have them, unless I order out, because I never buy/have bacon. I know, a major shortcoming on my behalf.
I'm jealous. I've been Jonesing for a good BLT for a while now.0 -

I like Red Beans and rice.
Recipes are all over but I use canned beans to make it even quicker and easier.
I don't like cooked Celery so I omit it.
I like to have some chicken(Cooked on a grill then shredded) and Sausage. The Sausage HAS to be andouille sausage, I like Conecuh Cajun Smoked Sausage or Holmes Smokehouse Pecan smoked andouille sausage.

My favorite idea of simple is also comfort food.
Grilled cheese sammiches and a big mug of piping hot tomato soup.
Usually whole wheat bread, sometimes pumpernickel, spread lite with Land-O-Lakes and given a lite sprinkle of salt. Two slices each of Sharp American and Provolone and for that extra twist several rings of thin sliced Vidalia onion between the cheese slices.0 -

One of my Mom's simple meals was Chicken Fricassee and it is one of my comfort foods.
Fricassee recipes differ by the number of cooks you ask...mine is as simple as it gets.
Salt and pepper about 2 pounds of boneless/skinless chicken thighs or breasts, dredge chicken in flour and brown in a heavy skillet.
Transfer the chicken to a six quart Dutch oven over medium heat add about six russet potatoes sliced lengthwise in six pieces, add a bag of baby carrots and cover with water or chicken broth. Simmer on medium low heat until carrots are tender, about 30 minutes or so...salt and pepper to taste...
If done right every thing is fork tender...leftovers are better the next day[:D]
You can add as many veggies as you want, it is all good.0 -
One of the quickest meals that I also enjoy eating is basically just a jumbo can of Bush's Baked Beans (I like their original recipe with onions) placed in a sauce pan on very low heat.
In a frying pan I will cut up several hot dogs into small bite sized pieces and fry them in just enouph butter and olive oil to coat the pans bottom. Add the dog pieces to the beans when browned or blackened nicely.
I have also substituted left over hamburgers that were grilled and not eaten from another days cooking fun. Just broken up into chunks and added to the simmering beans instead of the hot dogs.[:p]
A nice slab of homemade buttered bread along with this bean dish will stick nicely to your ribs and squash the hunger bug for many hours!0 -
I really like the grilled cheese and tomato soup post. Yes good simple eats. (Tomato soup has got to be cooked with milk or half and half though. Water does not cut it.)
I've been out of work for a few days with a foot problem. My Mom, last evening brought over some fresh from the garden cooked green beans, a couple foil wrapped baked potatoes, and some macaroni, beef, diced tomato casserole. (One of my favorites growing up.) Good simple fare.
She also brought over about 2/3rds lbs of left over unsliced London Broil. I've got the Pinto beans on a low simmer. Some Brown rice, diced fresh tomatoes and onions with the London Broil here in a bit, will be quite good. Good simple fare.0 -
