Pickled eggs
Just popped a jar open that I made a few weeks ago...delicous[:)]

I?ve been making pickled chicken eggs for over sixty years. Sometimes they come out better than other times, but this is the first time they were just plain not eatable and I can?t figure out what went wrong.
I had about three quarters of a gallon of dill pickle brine; about half a gallon of pickled jalape?o peppers in a one gallon jar and two cans of whole pickled beets.
I put six boiled eggs, two drained cans of pickled beets, two large dill pickles into the one gallon jar of jalape?os with brine. Everything was covered with brine. I put the jar in the reefer and waited for three days. The beets were good, the dill pickles were OK, the jalape?os were eatable and the eggs had turned into rubber balls, but I couldn?t even use them for rubber balls because they were still egg shaped.
I let them soak in the reefer for a few more days and they were even worse.

Too acidic, brine too strong, cut it 50/50 water. 0 -
I remember putting eggs in vinegar when a lad because it would turn them into rubber, but I always thought that it had something to do with the egg shells. Did you remove the shells?[:)] 0 -

Thank you I was trying to remember Knew we made rubber eggs. Just not how.0 -

I did peel the eggs, but I always have. I don?t think that was the problem. I forgot to put an onion in it but I don?t think that was it either. I?ll try it again when I have more dill pickle brine. It takes me a while to eat a gallon of pickles. I might try cutting the brine with water.
forgemonkey?s link says they are best after they soak for about a month. I?ve always called them done after about a week. That could be part of the problem, but I wonder why it never happened before.
