A little help from you cooks out there
I made a couple of dozen stuffed green peppers tonight. Every thing turned out fine and they are really good. Even though I followed mom's recipe for 6 peppers, I had 12 so just doubled everything. My problem is that I have a large amount of the stuffing mix. I don't know why except maybe my peppers were a little small. Can any of you folks tell me what I can use the rest of this mix for? I don't want to through it away and more peppers won't work. I'm the only one to eat here. Perhaps some kind of Mexican dish?

Use some of it in some cornbread batter. Will make an excellent Tex-Mex cornbread. 0 -
Your stuffing mix is ground beef and rice, with a few spices?
Tacos/Chalupas (add a pinch of cumin and Mexican oregano)
Chili rellenos
Mold into patties and brown for breakfast or burgers

They're just ground meat (of some sort) and rice, right? Simple would be make meat balls. Hell just flatten them out and make sliders. Or if you're stuck on Mexican make nachos. Crumble the meat and pan fry, throw it on top of tortilla chips. Put the Nacho topping and call it a day. 0 -
I've got an idea.
We can freeze all our foodstuffs that are about to go to waste, and ship it to Yosh.

You could also add some more burger to your mix and just make a meat loaf. Put some tomato sauce or cheese on top during the last minutes of oven cook time and you have another good meal.
If you have some nice Idaho potatoes around, you could just make yourself some tasty twice baked potatoes with your filling as well.
With these, I highly recommend adding BACON. Heck, if you just add bacon to your stuffing you can make ANYTHING worth eating![:p]0 -
Yeah, ground beef, onion, rice, diced tomatoes, spices, etc. I like the meatloaf and taco idea. Chili and spaghetti too. I have about a quart of this filling left so I may just freeze part of it. Thanks for the replies guys. 0 -
Aww... that's mighty white of you folks. I'm not quite there yet but I'll be sure to keep y'alls in the know. Still have to get in to my own pantry since I got to use up this prepped goods. Since this doomsday ain't a coming. 0
