    Never tried it myself but my Grandfather was fond of it . If I recall correctly he always live trapped them and put them in a cage for about a week to ? clean them out?. Said otherwise the meat would be ? rank ? .Think grandma baked them in the oven with taters and carrots

    My first ex-wifes grandfather loved them,,We would catch them live for him all the time,,he would put them in a coop and fatten them up with corn..He would turn down a beef steak to have a fresh baked possum

    Baking with peeled sweet potatoes is a known must do, the sweet potato soaks up grease which is a lot. Also as stated, feed the possum for a week on grain to clean out their systems, failing to do so you will be eating buzzard meat [;)]

    Here is her recipe:

    Roast Possum

    Possum is easy to catch. Hit ?em with a rock or a stick when they?s up a tree and you can have ?em in your sack afore they knows it. The yellow-bellied goomers is too scared to fight back, and they play dead jest long enough to grab ?em.

    Boil up half a peck ?o water or more, dependin? on the size o? your possum. Dunk the critter in boilin? water an? right away pull off his hair n? scrape ?em clean. Don?t forgit to cut off his feet, his head n? his tail! Clean out his innards. Put the possum in a hefty jug o? cold salty water and let ?em soak overnight. Change his water the next day and start boilin? him ?til his skin lets a fork pop through it easy like. They ain?t no time for cooking possum ?cause some is tougher than others. When the feller is jest right, dry him off and put ?em in a bakin? pan with a bit o? pot likker (juice left over after cooking greens or other vegetables) ?n some seasoned salt over his belly. When he is brown ?n toasty, he is ready for slicin? and servin?. Back home we fattens possum with ?simmons (persimmons), and most often we eats him with yams.

    Granny?s right, possums are easy to catch, but bear in mind they are scavengers. Once you catch a possum, it is best to grain feed him or fatten him with ?simmons for about 4 weeks. They paunch the same as most small game, but they do have scent glands, so be careful.

    And now for that all important question...What wine do you serve with possum?

    I suggest a crisp Pouilly-Fuiss?. After all, it is the other white meat.

    You mentioned your horses.. I heard somewhere that Possum Poo was toxic for horses.. if they should eat it - in their food.. have you ever heard that?

    If you need lessons on how to skin a possum or if you don?t want to get your hands dirty then you should probably just go to Wallymart or someplace and buy yourself some Possum Treat, that way all you have to do is open up a can and you?re eating possum.

    Actual Country Recipe For Opossum:
    Once you get your possum skinned out and cleaned you will need:


    >> 8 Big Taters
    >> 2 big spoons of butter
    >> 1 big spoon of sugar
    >> a pinch or two of salt
    >> Thyme, marjoram or pepper to taste
    >> 1 cooking pot with a good tight lid

    Put the possum in the pot with just enough water to keep it from burning, cover with a good tight lid.

    Possums take longer to cook than taters so wait until your possum has stewed for about an hour before you add the taters to the pot.

    Place the taters along the sides of the possum and mix in sugar, salt and your choice of thyme, marjoram or pepper to taste.

    Every 15 minutes or so take off the lid and baste the possum with the juices.

    By now the possums own fat will have rendered and the water will now make some delicious possum gravy.

    When the possum is tender and the meat falls off the bones mix a little flour, if needed, to the water/possum fat and tater mixture.

    Possum Cooking Alternate Method

    Poke your possum with a big sharp stick and hold it over the campfire or coal stove until it is crispy.

    Possum Stew


    1 possum; skinned & cut into pieces
    2 onions; chopped
    potatoes; chopped or sliced
    other vegetables; chopped or sliced
    1 can mushroom soup
    2 cans beef gravy
    1 can water
    1 tbsp. pepper
    1 tbsp. garlic salt
    Boil the possum meat in a large pot of water with a half cup of salt for about half a day. Pour the water out and add all the stuff to it. Bring to a boil, then simmer covered 4 to 8 hrs.

    Gravy is good sopped up with week-old bread. You can eat other stuff with it too. Drink beer.

    (TIP: 3 day old roadkill is more tender and easier to skin.)

    Yield: 8 Servings

    Last year we were invited to a holiday party held by one of the military vehicle groups that attends my rally.

    We were supposed to bring "something".

    I told them I would pick up some road kill on the way over and asked them if they preferred "fur" or "feather". They all pretty much agreed on "fur".

    I called a local cake maker.

    She came up with this.

    This year we are going with "feather" - and the cake maker is - according to an email I just received - "researching pictures of dead birds."

    She really is quite good. [;)]

    Bert Christensen's Weird & Different Recipes

    Ingredients:
    1 young, fat possum
    8 sweet potatoes
    2 tablespoons butter
    1 tablespoon sugar
    salt

    Directions: First, catch a possum. This in itself is excellent entertainment on a moonlight night. Skin the possum and remove the head and feet. Be sure to wash it thoroughly. Freeze overnight either outside or in a refrigerator. When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar. At the same time, stew the possum tender in a tightly covered pan with a little water. Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven. Baste often with the drippings.

    Stuffed Possum

    1 possum (whole)
    1 qt. cold water
    1/8 cup salt
    5 beef bouillon cubes
    2 bay leaves
    3 celery stalks (chopped)
    2 onions (sliced)
    1 bag packaged stuffing

    Preheat oven to 350 degrees. Soak possum in cold salt water for 10 hours. Rinse meat in cold water and refrigerate 2-4 hours. Prepare stuffing according to package directions. Stuff possum cavity with prepared packaged stuffing. Close cavity tightly. Place stuffed possum in roasting pan, add water, bouillon cubes, bay leaves, celery and onion. After 2 hours turn meat. Reduce heat to 300 degrees. Cook for 1 more hour. Test roast, if not done reduce heat and cook until done.


    Cajun Possum Chili - NUCLEAR HOT !!!

    Ingredients:
    Tomatoe Sauce (depends on possum)
    1 tsp.-1 cup Chili Powder (Depends on Taste and possum)
    1 Large possum or 3 small (If you ran over the possum better make it 4)
    1 large pot or two large ones if the first isn't enough.
    5-10 chili peppers (depends on taste and possum)
    5-10 red peppers (depends on taste and possum)
    5-10 jalapenio peppers (depends on taste and possum)
    How ever much Cayenne Pepper you like, it depends on your taste and possum.
    1 tsp. Black Pepper
    a pinch of salt
    Chili Beans for extra flavor
    And whatever other ingredients that are hot and spicy you would like to add.

    Directions:
    1. Skin possum(s)
    2. Remove internal organs, head, claws, and bones. There is no flavor or use for these. But if you want to add them, Go ahead.
    3. Put some tomatoe sauce in the pot(s). Then add the possum.
    4. Chop peppers
    5. Skip step four if you don't want chopped peppers; it doesn't matter.
    6. Put the rest in and let set for a long dang while.
    7. Before serving make sure you have enough bread, Milk, and Toliet paper for after dinner.
    8. Serve. Enjoy
    9. Race for bathroom. Whoever is first will make a large stench. Have enough air freshner.
    Serving size of Meal-depends on how much you put in and on the possum.

    Warning-You're a redneck if you try this. (Either that or you like really hot chili.) May cause sudden urges to go to the bathroom. May cause burned tongues and mouths. May cause severe indigestion!! ---Anonymous

    Well, when I was a kid our neighbor was found dead in his home and there was a possum eating him when found by my dad - pldtimer who had a porous house and guess he wondered in - After that no more possum for sure. True story

    Sounds like you had it prepared incorrectly. I'm guessing I've had it close to a dozen times, a few slightly different ways and never found it offensive, let alone "slimy." Likely why it's still eaten by many in the south, a delicacy, not just survival food. I know it's diet also plays a big part in overall results. Therefore, your results may vary based on where your opossum is sourced. [;)]



    SO, it looks like I need to corn feed a possum for a week or two then eat him? Well, I think I will go buy a sirloin and call it good.

    Agree, but add a nice salad in there also.
    You guys can corn feed all the possums you want. And cook it all up. No fighting me for stuffed possum.
