Question...
set up..own a DDAR-15 M4V7 topped with EOTECH 2 Holographic sight. Currently shooting following ammo American Eagle 5.56 55 gr and Winchester 5.56 55gr. Issue is sighting in. With each shoot session I am getting different patterns. Thus constantly messing with sight. Request input as to what would be best 5.56 ammo to use to get a more consistent shooting group. Am shooting at 50yds.

  If your POI is changing from session to session I would look real close at the scope and mount, make sure it is properly aligned and not loose on the rail. Changing ammo will result in changing POI's.  Different ammo, different load, different bullet and different MV all add up to a different POI. 
  

  What size groups are you seeing at 50 yards??

  Pick one ammo and use it to set your sight.  You will either have to make scope adjustments or use "Kentucky windage" when changing ammo brands and type.

  bpost has the first part right. If your POI is shifting every time, something is moving. Your challenge is to check all the obvious potentials first. As stated, the most obvious are the scope, the scope rings and the mount. Each of these as an individual part can contribute to the shifting POI because they have screws or moving parts.
  

  
  

  And as unbelievable as it may sound, a very few rifle scopes don't pass the test for accurately returning to Point of Aim either. Helpful but not necessary is to do a search for POI vs POA.
  

  
  

  Scope rings and scope bases have the potential to move especially after initial testing as the screws can move. Check these screws and use a torque wrench when there is an applicable torque specification.
  

  
  

  It's also possible that the upper and lower have a slight misalignment or that the trigger pins are not fitted correctly. Daniel Defense is a fine manufacturer but mistakes occur occasionally.

  Is it that the group size is changing, or the location of the group, or both? Either way, the first thing I would do is make sure every screw in the gun/sight package is tight. At 50 yards, from a rest, that gun should be making groups of a half-inch or better.

  Need more info about type of support used for accuracy testing/sight zero. Using a consistent shooting position and support is an important part of accuracy. Also, the EO Tech isn't a precision sight and mixing ammo may cause POI shift. The "mil-spec" type ammo may not be cloverleaf accurate either.
