    Whattayamean "dirty rice" without chicken livers? That's like beef stew without the meat. Or shrimp and grits without the shrimp. Clam chowder without clams. It just ain't.

    Sorry, my normal Post a New Discussion BS, plus bad weather, cell, Internet, Satellite TV out.

    1 1/2 lbs. Lean ground Chuck mixed in with 1 large fine diced onion. Slow browned on med. heat. Drain, 1 large fine diced green pepper. 1 pkg Zatarains Dirty Rice, one cup Brown Rice. 3 1/2 cups spring water, Salt/Pepper, Tony Chicarelle's Cajun spice, 5-6 shots of hot sauce, 1 tablespoon dried Hatch peppers, about 2 tablespoons EVOO. Slow simmer for 25-30 minutes, after a vigorous boil.

    Smells awesome. One of my favorite meals. Super easy to prepare.

    That sounds just fine, Ken. Nice recipe for a kinda-sorta Cajun rice dish. But it isn't dirty rice. Because dirty rice uses chopped chicken liver and not ground chuck. You can't change a major ingredient and call it the same thing.

    Dude that isn't dirty rice that is rice with meat and onions.

    Dirty rice needs to have Pork(Or pork sausage), Chicken livers and Chicken Gizzards in it.

    Here is a recipe for you to follow next time and find out what Dirty Rice is supposed to taste like:

    Well, I always use a box of Zatarain's (from New Orleans, LA.) Dirty Rice as a base to add to. Their listed meat ingredients to add are: "Ground Beef, Ground Sausage, Ground Pork, Ground Turkey." (Chicken Livers are not mentioned.) Since i do not care for Chicken Livers, I will not be adding them.

    *Adding Chicken Livers to any of my dishes, would be akin to Sam06 adding Lima Beans to one of his dishes. Ain't happening.

    I always like the dish as I make it. That's all that really matters to me in the end.

    You guys feel free to make it the way you like. It won't bother me a bit.

    But you are doing it wrong and you may like it if you try it.ย  Maybe you should try lima beans in it next time ;)

    BTW the chicken livers basically disintegrate and just add a depth of flavor to the dish.ย  Using Zatarains to make it is kind of lazy Rice isn't hard to cook and adding a few spices is easy to do.ย  If you were going camping I would say the Zaterains is fine but at home, home made is the way to do it.

    Now get down a give 20 to the big Ranger in the sky for being an NBC puke......... :D

    I will have my Lima beans on the side, because they are good all by themselves.

    All ya got without chicken livers in dirty rice is a rice dish...chicken livers are the main meat ingredient in the dish.ย  ย Among all flavors in the dish, chicken liver and black pepper should be prevalent.ย  Don't get me wrong...there are some fantastic rice concoctions out there, though, but Zatarains?!ย  ย Sam's right about that, so add one for the Corps!!!ย  :D

    I'd happily chow down on your recipe with you, Ken. It's a fine dish. My only beef (pun intentional) is that you call it dirty rice. It isn't. It's something entirely different. You might as well call it an ice cream sundae.

    What you boys are not hearing/understanding is that I do not like Chicken Liver. I will not be adding it to any dish that I plan on consuming. Those of you that like it. Wear it out. ๐Ÿ‘Œ

    No, Ken, it isn't and wasn't about you and chicken liver. It is totally about calling that recipe what it isn't.
    I repeat: it's a fine recipe, and you can make it any way you like. But you have to call it something else. I suggest "Ken's De-Livery Rice."

    Kinda like Chili afficianado's. There are two camps. Those with beans and those without.

    I put beans in my Chili. If you do not, I do not care. Feel free to call it whatever you want.

    I butcher a bunch of broiler home raised chickens every year.

    Livers are used exclusively for catfish bait.

    Geez, Ken, no need to get touchy. We're just talking about food here.
    Zatarain's is fine, if you like a double-hands-full of salt in your food. I'm not against it, or you, or your recipe. I have used it. Once. I feel about it the way you feel about chicken liver - for which you agree we both have a perfect right.
    And I am SO tempted to end with "If you don't like chicken liver, you're anti-American." But I won't. ;)
