    EVOO to do pork chops? Bacon grease, my good man is what you need to use. Actually bacon grease on the spuds and beans. Flavor and it's ability to fry.

    Brussel Sprouts in Bacon with Mushrooms
    Family dinners in the Fall could get to be about 20 people including older kids so I got one of those big barrel grills and used real hickory chunks for grilling pork chops. I had a pair of side burners run off of propane which I could use for the veggies. I can usually find a whole stalk of brussel sprouts in the fall and this recipe used all of them for that many people. Almost no one thought this dish was a good idea the first time but I fix it a couple of times a year now by request.

    Flying Clay Disk - Simmer for 40-45 minuets? Dude you'll need a gallon of anything to wash that sponge down. Unless you were using the chops to flavor the sauce and meant to be tossed to the dog. Reminds me of the meats used to make the Sunday Gravy. If I had a dog that critter would be happy when ever I made the Sunday Gravy.

    My folks have always been big on pork.  Back in the 1850s they ran a story in the Catahoula Parish, Louisiana area about my ancestors that lived way out in the woods...said they raised corn, peas, potatoes, pigs, and children.   Back in those days the pigs were not fenced and came a runnin' on Soo, Pigs, Sooooey!  :)  Sloppin' pigs pays big dividends come supper time!
