Found, bought,tried, the Cotija cheese...
Was expecting it to be a hard cheese. It's semi soft and crumbly. The flavor is really really good, but you got to get past the salty taste. I really like salt and salt the heck out of everything, but this is too salty for me. (just breaking off a hunk and eating it as is) We're going to try it in recipes and see. Appreciate the recommendation of this cheese.
