I want your sausage...
....recommendations. 
I'm cooking jambalaya for the fam tonight, but I want to use a different smoked sausage. I know you're supposed to use something like andouille, but it's too spicy for my 92-year-old grandfather-in-law to have. The recipe is really watered down in respect to the proper spices, but that's OK.
I have been using Hillshire Farms smoked beef sausage, which has a great flavor, but it is sooooooooooooo fatty! I have to really, REALLY cook it down in the frying pan first before I add it to the recipe, otherwise all that fat cooks off into the mix and makes for an oily, ugly mess.
So, like the title says, I want your sausage recommendations, please. Can you please recommend a less-fatty, non-spicy sausage for me to try this time? I'm heading to the grocery store later today to get my ingredients, so please try and stick with "popular" brands that I'll find at my local Wal Mart.

if you get one of the turkey sausages, it will be more bland/less spicy and way less grease........... 6 -

Boil the smoked sausage first then throw it in a skillet to get the fried flavor you want. Boiling it will remove most of the fat so you don't have to burn it up in the skillet. 0 -

I have also found it at our Meijers stores here in Michigan. I highly recommend both the pork\beef mixed and the all beef varieties. Very meaty and solid. Great flavor!3 -

I don't think our local grocer (in Colorado) carry the Kiolbassa brand, but I'll keep an eye out!
I ended up purchasing turkey sausage, so I'll let y'all know how the jambalaya turns out. If the fam doesn't like the flavor of the turkey sausage, I'll go back to the Hillshire Farm kind and try the boiling method. Thanks everyone!0 -
REALLY?!? Interesting! I've always thought andouille was especially spicy. Even if I'd know that when I went to the store this morning, I couldn't have gotten it. Nearly ALL the sausages were gone, in all varieties and manufacturers.Flying Clay Disk said:Just a thought for the future...Hillshire Farms makes a really mild Andouille sausage.
