I love that word. Lol. Since retirement I have been watching a lot of cooking shows. Being the working mom of four VERY active kids, cooking from scratch was not high on my list of things to do.
The kids make fun of me now, complaining I cook more than I ever.did for them. I now own and use a crepe pan, whip up a mean cobbler and use the oven for more than storage.
I haven't spatchcocked a chicken yet but it's on my to-do list.

That looks great. I never spent a lot of extra effort on "presentation''. However, I don't like my omelets torn. Food, much like beer can only be rented.

That indeed may be the origin of the word. Preparing it that way allows the bird to be cooked with dispatch. "Dispatch cock" became shortened to spatchcock as a further instance of brevity. 0 -
