You Inspired Me Kimi -
Was looking through an old cooking thread. Came across pictures of your big ol' pot of beans, and our interaction back and forth - as to the recipe.
Started a crock pot full of dried Pinto beans, with a large thick left over grilled Pork Chop. Fine diced and added in. (Buddy got the bone.) A couple shots of EVOO, a decent amount of Tabasco, some salt/ground pepper, a decent amount of ground Chipotle Pepper dust - thanks to the genorosity of Gunnut505. On High, until heavy boil, med. After that, down to low overnight. Can't wait. Beans and rice with diced fresh onion and some Salsa on top, one of my all time favorite meals.
I have about 15 gal. of dried beans in Sealed buckets upstairs in my SHTF stash, as well as about an equal amount of Brown Rice.

Ramen, Beef Sticks, Jerky, dried veggies, MRE's, Spam/Treet, Corned Beef Hash, copious canned goods, tons of individually sealed condiment packs, salt/pepper, etc. etc.
I will probably eat better than I do now. 😁

Might be a good idea to boil them beans a bit first. It'll take 2 days to soften them beans in a Crock pot. 0 -
My Crock Pot on High, will have the entire pot, at a rapid boil within the hour.
You must have a weak A $ $ Crock Pot. You get what you pay for.

I must locate one of there super crocs. When I have to shelter in [lace while the virus sweeps the nation I can cook up these 50 pounds on pintos. 0 -
My Crock Pot, is at a vigorous boil just now. Should I turn it down? (Or) Just ignore it, because it is not possible?
Hamilton Beach, 6-8qt. High, Med. low, warm. High will get stuff up to a boil PDQ.

I have a couple of crock pot brand cooker and they'll get to a low boil given enough time. I may have to get a HB and give it a try., it takes 2 days to cook beans in mine. I could get out my 18gt roaster and cook up enough for a month. sometime I do use it to cook about 4 gallons of soup and then freeze it in quart bags. we used to put a pot on the wood stove at camp in the evening, as long as you kept adding water they would be good to go by morning/lunch time next day.... 0 -
I LOVE Wood Stove cooking. A pot of beans is about the best.

Smells Awesome about now. On High Boil.

Dropped it down to Warm overnight. (Still low boil.) Brought it back up to Low this morning after stirring. (Pretty decent boil.) Added some more salt, and some powdered Chicken Bullion. House smells great. Will cook up some rice and dice some onions later this afternoon. Looking forward to the meal. Snowing/windy out - perfect meal for such a day.
If I remember correctly, Kimi removed a 1/3 of the beans, mashed them up and reintroduced to the pot to thicken. I may use a manual (potatoe masher) and mash some in the pot to do the same.
Wish I had some Chow-chow.
