How many of you eat buckwheat??

I remember seeing buckwheat pancake mixes when I was a kid (Damnation that was a long time ago!!) but that exhausted my knowledge on the topic of buckwheat.  Fast forward a lot of years to 1998 when I did the smartest thing I ever did: I married my wonderful Russian wife.  Shortly after we got married the first Russian grocery store opened in our area.  Julia made it very clear we were going to stop on my first day off.  Buckwheat was one of her purchases (Along with some type of preserved, truly disgusting fish that smells awful and has a soft gelatin like consistency.)   When her parents are here she will occasionally still buy that nasty fish.  If the two kids are here when she gets that fish out of the fridge it is a three people stampede out of the kitchen, me and both kids!!   :/      

Anyway back to the buckwheat, I had to eat it a couple of times to get used to it but now I love it.  According to my wife buckwheat is very good for you and is a good thing to eat if you are starting to have problems with diabetis (sp).   Buckwheat is a nice change of pace from rice.  It has an excellent flavor.  You just boil it like rice.  Served it seems to have a firmer texture than rice.

    I've eaten it in Bulgaria, usually as a sort of porridge called kacxa/kasha (if you married a Russian woman I'm sure you can read Cyrillic, but others cannot). I don't like it, and much prefer a bowl of oatmeal, which is impossible to find in Bulgaria. 
    I have also experienced the fish :'(

    Buckwheat flour is common around here. It's grown milled and labeled in WV. Raised buckwheat cakes is my favorite. It's not cheap. I've seen 5# bags for around $10. I've never seen whole buckwheat though.

    Buckwheat pancakes quite often when growing up at home. Mom would make the batter then let it sour. Pretty tasty.
    Hard to find "real" buckwheat now a days. What you do find is mostly plain flour with a little buckwheat mixed in.
    Ever plant a buckwheat crop for turkeys. they will travel in hoards for miles to get to it.

    Have a good friend that used "Buckwheat" for his handle on another forum.  The forum moderators gave him the option of losing the handle or get out of Dodge.  

    I had a black pigmy goat that we named Buckwheat.  He was quite a character. Wish I could find some of my old pictures of him.  Wife made him a straw hat that his horns fit through and he always posed with a straw sticking out of his mouth! :D

    I was raised on oatmeal and Cream of Wheat hot cereals.   I still enjoy oatmeal but memories of that cream stuff haunt me to this day!!

    Wife makes bread and pancakes. We love buckwheat noodles too. Unfortunately, the flour or the noodles are seldom found in grocery stores here. We have to mail order. Bought 25 lbs of whole grain buckwheat flour & 5 lbs of noodles on-line.

    Back before US Customs began confiscating them, I used to get foreign military rations. Many of them had meat and buckwheat mains. I still have one Lithuanian Chicken and BW (one of the best of them all) and a Polish Beef and BW. Most Russian rations contain at least one and sometimes two portions of meat and buckwheat. They also contain some wonderful pate, but that's another topic. Can't get any of that any more, even through retail channels because Customs doesn't allow any meat products in, period.

    I've got a neighbor who grows it, he places a stand of honeybees in the buckwheat when it is in bloom and gets a super full of buckwheat honey . He shares some of it with me. :)

    Buckwheat crepes are big in Brittany France.  While at Mont Saint Michel we had a desert one which was made with cream spiked with Calvados liquor.  The cream is whipped in copper bowls individually for each order.  The one we had was really spiked with the Calvados.

    Most buckwheat crepes are savory usually with a sunny side egg in the middle.

    I grow buckwheat in the front yard.  Probably a different species.  buckwheat honey is good stuff.

    Sounds like gefilte fish, jellied carp.
