Chile Colorado
The wife and I went to a very good local Mexican joint today. I usually don't stray too far from one of their combos containing some sort of burrito, tamale, taco, with beans and rice. Today, I tried Chile Colorado for the 1st time. They offered a few different versions and I ordered spicy. Holy cow! It lit me up, but in a good heat type of way. Anybody else like this or venture into making their own? I might give it a shot in the future.

I believe it's a New Mexico dish. We have a fabulous little hole in the wall diner here operated by a couple who make New Mexico style cuisine - even getting NM chilis in every week. Chile Colorado is one of their most popular dishes. 0 -

Love Mexican food. (Used to live in El Paso way back when. Would go to Juarez every Sunday after Church to eat, back when it was safe to do so. (Late 60's/early 70's.) ) Loved that time, wandering the city. We had just got back from 6 years in Europe, so it was a culture change.
Never heard of Chili Colorado, will have to look it up.
My Brother and his wife reside in Farmington, NM. Gunnut505 used to send me spicy "Care Packages" on a regular basis. Still have a bunch of his generosity. I think about and miss him, every time i use the stuff. What a great guy. Miss you Brother.

In NM it is usually just called red chile. Some places serving mostly tourists do call it Chile Colorado, and they also tend to call green chile, chile verde. The official state question here is "Red or Green?" If you want both, say Christmas. 0 -

Chili verde is made with pork; chili colorado is made with beef, where I have been. (Mostly Nevada) 3 -
