    You are doing it all wrong. You have to chew on the wood chips, like Wood Jerky.

    ken i have to disagree but only because of my circumstances. i use pecan to smoke with, it doesnt need any flavor enhancing. IMHO it is hands down the best smoking wood there is and i have been lucky to have good supply. it is usually not commercially available but i have enough to see me thru to the other side.

    I have some Jack Daniels barrel wood chips that I have to try. Usually I use wild cherry, I have a pretty good supply.

    But soaking helps the chips last a bit longer.

    I always soak my smoking wood chips in just plain water overnight. I do usually put various fruit juices or chunks of apples, oranges in the smokers water pan. I have an unlimited supply of wild cherry wood that I often use but also like apple wood chips or hickory on occasion.

    I'd like to get some pecan to try!

    Soaking woodchips is the 9mm vs 45 of the Big Green Egg forums.

    Big Green Eggs website actually recommends it, which really pisses some guys off.

    I've got to admit I am a total NewB at this smokng thing. Trying to figure it all out and learn the ins and outs. I have heard about the soaking in fruit juice thing also. That sounds more palatable to me.

    I am going to use a "smoking bag" today to smoke a pork belly in the kitchen oven...I smoke allot...but this will be a first for me...

    I use apple wood chunks and chips, and always soak them so they smolder, not burn. I doubt anyone could tell the difference in taste between water soaked and anything else - it's the WOOD that flavors the smoke.


    P.S. If Guy Fieri says it, it's cause to disbelieve it. I've eaten in at least a dozen of his "rave" DD&D places and all but one have been mediocre at best.
