    Been using Heinkel for decades...the newer ones pale in comparison to their older ones. Thanks for the info...will come in handy when I need a new set.

    Got one of these for Christmas. Sat in my chair cutting wrapping paper into horse manes. I now think I’ll complete the set. Sharpest knife I’ve ever used.

    Dunno about you guys, but I LOVE the sound a high end high carbon steel blade makes when you draw it past another piece of steel. Zssssiingggggg....

    We have a set and a half of Cutco.

    Probably not the fanciest, but still made in New York, USA.

    FYI: Cutco and Ka-Bar are the same company.

    Grouch Attach has 12-15 knives in the knife block thingie and I'd bet $20 not a one is sharp. Good knives are wasted on her so I don't even bother. I keep the knives I use to cut meat stashed in a spot where she can't reach.

    The Cutco sharpening works great.

    You send them in and there's a small fee based on how many knives you send at once.

    Usually takes a week or maybe two, depending on shipping.

    If a knife can't be sharpened (there must be a minimum spec) they just replace it.

    I bought my Mom a good set of knives years ago thinking her husband could handle the sharpening details when I wasn't there. Well, that failed because he didn't understand the use of the steel. So I bought them one of those Chef's Choice edge Select like above thinking this was easy. Nope. Ground them wrong and nearly ruined the set.

    Then I just made sure to bring my ceramic stick with me when I visited and devoted about 30 minutes to fixing up her blades.


    These do a great job and are easy to take care of. Cost can run from cheap ($12.00) to a little more expensive ($30.00) at the upscale suppliers. This one is the longer 12" one so it was about $20.00 when I ordered it.

    Good for burnishing the burr off, but not too good for shaping.
