How long to cook a standing rib roast per pound for a rare roast??

    I bought an in the oven thermometer, to a stove unit.


    Worked like a chimpampee...

    Mine was 200° until it reaches 180°.


    Pull it out, and let it sit for 10 minutes.


    Ifirc, about 3 or 4 hours for a 12lb rib in.

    Rib roast is so rare in this household I wouldn't even know what temperature to sett the oven.

    The 500 Method


    Pre-heat oven to 500 F. Cook prime rib uncovered for 5-6 minutes per pound at 500 F. Turn off oven and let roast sit in oven for 2 hours. DO NOT OPEN OVEN DOOR. Roast will be a perfect rare.

    500 works for me to.

    Internal temp to about 125

    Set oven at 500 as stated. I have found that 4.8 minutes per pound, then turn the oven off for 2 hours without opening the door, will get you rare. 5 minutes per pound will get you medium rare. I know it sounds a little goofy, but I have found that I need to be exact on the roasting time.
