Fresh Basil ...

We always have a pretty good sized basil patch. I have found that it takes 100 to 140 good sized basil leaves to correctly season a pot of pasta sauce!! I found this out by trial and error, starting off with 25 leaves and not being able to taste the basil flavor. Even 120 leaves is not overpowering. Surprised me when I started down the basil flavored pasta sauce path.

When you need class, erudition, perfect diction, a true gentleman, you can't do better than Basil Rathbone !

    Excellent with a saber too.

That's one way to season a rabbit. Now feed it some salt and garlic.

Par boil or pressure cook until tender. Roll in flour, salt and pepper, pan fry until golden brown, place in warm oven, make gravy. Feast. Opps, forgot the hand made biscuits.

Few things make a kitchen smell better than chopping basil.

    Rocky's Buzzed 'Mater:

Cut a deep core from a fist-sized ripe tomato. Salt and pepper well.

Fill the cavity with fresh chopped basil and grated cheddar or asiago cheese.

Nestle the 'mater on a slice of toast, also sprinkled with cheese.

Drizzle the entire stack with olive oil, getting some in the cavity and on the toast.

Buzz in the m'wave for 60-80 seconds, depending on the size of the 'mater.

    Makes a wonderful breakfast.
