Doctoring up Menudo for the Weekend.
So while looking for things in the pantry to bag for the fumigation I found two big 5 pound cans of Juanita's menudito and Picoso. I plan to go buy some pig's feet and beef tendons to add to the mix.
One of these days I'll make Menudo from recipe. Don't have the confidence in cooking the beef tripe. I know all I need to do is just boil the silly thing but doctoring is just easier.
You know I might make some Souse, too. Get some pig snout and feet.

Brings back memories of my grandmother turning pig intestines inside out, soaking in salt water and baking soda several times until ‘white’ to use for casings ,,,,,,

I Never acquired any taste for it my mom like pickled pigs feet and souse but us kids made fun of it so much she quit eating it .

No pig snout this time.
Beef tendons are funny things. When cold it's like old gummy bears but not sticky.
Two five pound cans of menudo is a lot of menudo. Still got like 4 big portions left. After this I'll be menudo-ed out for a while. I got to find ones without the maize. two cans with the corn is too much corn.

I can eat anything, including menudo but menudo is not something I can enjoy.
Once up on a time I spent a lot of time milking cows. When a bowl of menudo is placed in front of me and the aroma arises to my nose, I can smell cow poop. At that point, if I need to eat the menudo to be a good guest, I will smile and swallow without breathing. But no pleasure at all. No thank you!
