Yosh, I had lunch in a 120-year-old Basque restaurant yesterday. Ordered a beef tongue sandwich and the waitress asked "With garlic?" I nodded yes. Then she said, "You know this is a Basque place, so 'no garlic' means 'with garlic' and 'with garlic' means 'WITH GARLIC' don't you?"

And it was. And in a 10-inch roll smothered in onions and green peppers. Magnificent.

Also, like any Basque place, it came family style with lots of "goeswits" in the form of a tureen of cabbage soup, green salad, french fries and fresh bread.

The only way I have ever eaten beef tongue has been pickled with onions and garlic cloves. I really like it and am sure eating it fresh on a sandwich would be great!

Rocky Raab  - I like the sound of that restaurant. You start with garlic and finish with garlic. Like the French with butter.

mohawk600  - I reckon the beef tongue will turn in to tacos. I have some dried Ancho or something that looks like it that I should use instead of pack it in the van. I'll boil it and start packing the kitchen cabinet food stuffs in to the van in preparation for the fumigation. After all I'll have like 3 to 4 hours to kill.

So how was the bear tongue?

Small, but good, we pickled it. Bear quality is determined by what they are eating. This one was dining on elderberries and was very good. Everyone who tried it, liked it. We have seen 7 so far this year and the season goes until after Christmas. We are hoping for snow. The road has Vigo Mortensen and Charlize Therone in it.

The beef tongue came out pretty good. I could have put a few less bay leaves. I saw a Mexican dude on youtube cut up the tongue before cooking to lessen the cook time? Since it was in Mexican with no English subtitle I don't know. But it seemed like a good idea. I cut in threes. The tip, middle and the back. The back is the best if you were wondering. By cutting in to threes the cook time was no different. Basically you cook until the tongue skin/membrane comes off easy. I think it took 5 hours?

I could have used a potato masher to make taco meat. Yes it was that tender.

Need to watch "Six string Samurai". It's a fun alternate history Dystopian movie. Elvis is the King, and the King is dead.....

I need to find this. My life is meaningless without it. Kind a reminds me of "Cherry 2000" but unlike this movie I need "Six String Samurai". I see it came out in 1998. I wasn't into movies for another few more years. Palm Pictures I used to get used DVDs of theirs when Hollywood/Blockbusters would sell their movies.

I think I saw either Netflix or Amazon Prime has The Road. I read the book and then saw the movie years back. It's a rough one. The Book of Eli is my all time favorite Dystopian Future movie.

I agree, the Book of Eli is a great movie. Saw it again a few weeks back. One of those movies you can watch over and over. Gary Oldham (sp?) Always play a good Bad Guy.

The Old couple living out in the middle of nowhere was kinda creepy. 💀

Tex, you sound just like Archie Bunker from All in the family when he refused to eat anything that came out of a cows mouth. When poor Edith asked him what he would like, he told her to just make him some EGGS! 😁
