White meat if the meat is moist. Dark meat if the white meat is dry.

I like both with a bit of favoritism for white. If the turkey is dry, GRAVY is my friend!
Not related to your question S\F but the dressing makes Thanksgiving dinner......Thanksgiving dinner for me.
Been using my long late moms recipe for dressing using pork sausage, chopped onion, celery, cream of mushroom soup, eggs, sage, dried cubed white\wheat\corn bread and a bit of added milk to get it moist enough.
I was once told by a dinner guest that each bite of that stuffing was equivalent to an entire slice of bread. I just asked him to pass the stuffing and the big gravy boat as well!! 😁

Quite often we only do a breast, or if we do a whole turkey the other half will take the legs to her single coworkers, so I guess that tells you which we prefer...

For Thanksgiving my Mom used to make cornbread stuffing. She would bake cornbread, cut off the crusts top and bottom. and use the center for stuffing.
Me? LOVED the crunchy crusts. Which were surplus to her efforts. Forget the turkey. Forget the stuffing. Just give me all the hot crusts and a stick of butter- and I'm good!
