Mom use to can hundreds of quarts from the garden. I can still hear those Ball jar lids “poppin”

We just blanch are beans for a minute or so then vacuum seal and freeze. Did try and pickle some banana peppers this year though.

I have pickled banana pepprs for several years. Now we buy those and freeze the peppers to make stuffed peppers.

You "can" but the results are undesirable.

They originally put up food in canisters, and the term remained after glass jars took over.
