What is the maximum number of long guns that can be transferred at one time using a form 4473?

  There is no limit.

  If more are transferred than can fit on the 4473 a continuation sheet is used.

  As may as you can afford.

  No limit on number allowed at one time.

  Keep adding paper as necessary as said above.

  If the sale takes place in a border state, and if the long guns in question are centerfire semi-autos with detachable magazines, the dealer has to file a "Report of Multiple Sale or Other Disposition of Certain Rifles" form with the BATFE.
