Smoked Prime Rib- nailed it
I have cooked some good meals the last few days.
Tonights smoked prime rib was exceptional.

USDA Prime cut this was just under 5lbs.
Seasoned with McCormick steak seasoning & fresh herbs, vacuum sealed for about 24 hours.
Pulled from the fridge and let it get to room temperature, then cooked @250f until internal temp was 120 over pecan wood smoke. Ran the Big Green Egg up to 550f, seared it on both sides and then pulled.
Rest for 10 minutes, then slice & serve.
I use a “Meater” digital thermometer to be sure it was the right temp.
The green line is internal temp of the grill, purple line is the internal temp of the meat.
