Trying something new to the turkey #2
After seeing how they ladle hot water on duck to tighten their skin for Peaking them. I thought maybe I'll try something like that on the turkey pieces. I'll boil the turkey brine and let them soak a bit in the cooling kettle. I figure this'll cut the cooking time down some, too. But I won't brine the breast since it's for the dogs. Rub down the skin with salt and spices then finish it up in the oven. I'll rub down the skin of the breast because I'll eat the skin. It's the best part.
