Ham Jerky -
I know I've posted about this in the past, (but) I would encourage those of you who like "Jerky," to try it.
I have three packs of thin (1/8"?) Sliced Ham. 1 lb ea.
Gonna slice them in to strips and then dehydrate them. (185Β° for 10-12 hours. Probably more than it needs.) [Commercial dehydrator, Harvest Foodworks.]
This stuff is (no marinating, prep etc.) phenomenal, coming out of the dehydrator. (Smoker would work, probably be excellent, but I've not experimented it enough to comment.)
If you like Bacon, you'd Love this.

Thanks for the info Ken, but we don't eat much pork. Brats in the summer, baby back ribs once or twice, and our annual honey ham at Christmas.
We never eat pork bacon ( I know, sacrilege). Our bacon is made from venison each time a deer is harvested, so we always have plenty in the freezer.
Venison,fish, and chicken are the staple meats in this house, with an occasional beef steak or smoked brisket.
I put over 900 filets, and 3 deer in the freezers so far, and I'm going to hunt a couple more times before putting the equipment away.

I remember now, it was you that posted about this 5 or 6 years ago. I should have thanked you before because I tried it with leftover spiral ham and it was excellent! Haven't done it yet this year and I just used our leftover ham to make bean soup last week. Guess we'll have ham for Christmas with hopefully plenty of leftovers to alleviate my craving for ham jerky, a.k.a meat candy. Bob
